Cabbage rolls are one of my favorite dishes when it comes to cooking for my health. When I found this recipe for diabetic-friendly cabbage rolls, I knew I had to share it with my friends who also have to be careful about their sugar intake. And not only is it healthy, but it’s also absolutely delicious.

Step-by-Step Recipe for Cabbage Rolls

First, you’ll need to gather your ingredients. For the cabbage rolls, you’ll need:

  • 1 head of cabbage
  • 1 lb. ground turkey
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 cup cooked brown rice
  • 1 can (15 oz.) tomato sauce
  • 1 can (14.5 oz.) diced tomatoes
  • 2 tsp. dried oregano
  • 1 tsp. salt
  • 1/4 tsp. black pepper

Start by boiling the cabbage for about 15 minutes, until the leaves are soft enough to roll. Once the cabbage is done, rinse it with cold water and carefully remove the leaves one by one. Set aside.

In a separate pan, cook the ground turkey until browned. Add the chopped onion and minced garlic and sauté until the onion is translucent. Stir in the cooked brown rice, 1/2 cup of tomato sauce, 1/2 can of diced tomatoes, oregano, salt, and pepper.

Preheat your oven to 350 °F (180 °C) and get ready to start rolling your cabbage rolls. Spoon about 1/4 cup of the turkey mixture onto each cabbage leaf and roll it up tightly. Place the rolls seam-side down in a baking dish.

In a separate bowl, mix together the remaining tomato sauce and diced tomatoes. Pour this mixture over the cabbage rolls in the baking dish. Cover the dish tightly with foil and bake for 1 hour.

Too Much Cabbage?

Have you ever found yourself with way too much cabbage on your hands? I know I have! But fear not, there are plenty of delicious ways to use up all that cabbage. One of my favorite recipes is a simple yet flavorful stir-fry.

To make this stir-fry, you’ll need:

  • 1 head of cabbage, thinly sliced
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp. olive oil
  • 1 tbsp. soy sauce
  • 1 tbsp. honey
  • 1 tsp. sesame oil

Heat up the olive oil in a pan over medium-high heat. Add the sliced onion and minced garlic and sauté until the onion is translucent. Add the thinly sliced cabbage and stir-fry for a few minutes, until it starts to soften.

In a separate bowl, mix together the soy sauce, honey, and sesame oil. Pour this mixture over the cabbage and stir-fry for an additional 2-3 minutes, until the cabbage is fully cooked and coated in the sauce.
